British beef at its finest! We source entirely native breeds like Angus, Hereford, Longhorn, Shorthorn, Dexter, and Belted Galloway (with occasional British Blues) – the specific breed varying each week based on marbling and quality. All our cattle spend at least two summers grazing freely, followed by a finishing period on our farms' expertly curated natural homegrown feed. These slower-maturing breeds develop a richer flavour, further intensified by our 28 day dry-aging process using Himalayan salt.
