Raan is a heavily spiced roasting joint which is loaded with coriander, cumin, cloves, garlic, ginger, onion powder, kasoori methi and much more. It's basted with ghee while it roasts so it glistens like no other leg of lamb you'll have. It is cooked to a tender well done with a spicy crust just as the ancient Emperors of the Indian sub-continent requested.
When fully cooked, this already exquisite dish is then smoked expertly by the team at Smoke&Bones to give it an extra punch of flavour that is often missing when you make it from scratch at home. Traditionally this dish was cooked over live fire, and doing that is tricky - so leave it to us so you can do a simple home reheat and dine for a feast like never before! Because of the way this is butchered, you can slice clean steaks from one end, and carve and shred the remainder so you get different types and textures of meat.
